I'd hazard to guess that it's either Mario Kart Wii, Sonic & SEGA All-Stars Racing or (believe it or not) Toe Jam & Earl VC because those are what my kid and I play mostly.
Individually, I'd say probably Tenchu: Shadow Assassins because after you beat a level you can go back and replay the shadow version of it. Although Red Steel 2 has been keeping me entertained for quite some time now.
